Whenever I can, I love to pack lunch in advance. This one thing checks off an important item from my to-do list. Especially because if lunch is ready to go, there is less chance that we eat out i.e. indulge in a hefty dinner-size burrito for lunch.. then end up napping or drinking additional coffee in afternoon.

In short, a balanced, ready-to-go lunch will make a difference in your health, not only in summer but all four seasons. So if you don't focus on your lunch. Pay attention! There is no need to skip lunch for weight loss. Rather eat balanced lunch, portion control so that you don't overeat, and then see the magic! Seriously, you can get your health back with one healthy lunch a day.

  • 1 small Vidalia onion, chopped
  • 3 large garlic cloves, sliced
  • 1 medium green pepper, chopped
  • 1 small red pepper, sliced
  • 1 bag (10 oz) baby spinach, removing any stems rinsed
  • 1/2 lb asparagus, fresh (pencil thin), (cut off the tough ends)
  • 1/2 bunch scallions, sliced thin
  • 1/2 lb ex-large fresh shrimp, tail on
  • 1 can (28 oz) diced tomatoes
  • 1 cup water
  • 1/2 cup white wine
  • 1 Tbsp lemon zest
  • Louisiana seasoning, black pepper, dried dill, basil, Goya Adobe seasoning, salt, a few red pepper flakes
  • 2 tsp sugar
  • fresh shredded Parmesan cheese topping

  1. Cook long grain rice for 6 servings.
  2. Use a large deep stainless steel covered skillet. Add olive oil and heat on to medium.
  3. Add celery, onion, garlic, and green pepper. Stir veggies in oil until tender.
  4. Add diced tomatoes. Add 1 cup of water rinsing out the can.
  5. Bring to a boil. Stir in the spices, test taste after simmering. add more if you like. If too spicy, drain off a little liquid and add a little water. Add wine and lemon zest.
  6. The next steps are very fast and vigorous. Toss in the rinsed shrimp, followed by, asparagus, scallions, red pepper and spinach. Do not stir. Cover immediately for 10 minutes. Remove cover, toss slightly. Remove from heat.
  7. Using a nice Italian serving platter. Place cooked rice in the platter, Top the rice with the tomatoes, arranging all the beautiful colorful vegetables & shrimp on the rice for a wonderful presentation. Top with fresh shredded Parmesan. This dish is so full of great flavors.

Molho à Campanha (Brazilian Pico de Gallo)

Recipe: Zesty Shrimp and Veggies

This recipe was made up as I walked through the doors of the supermarket. Only knowing I wanted it to have shrimp. Then off to the produce department for the bulk of this wonderful invention. You will be amazed. I was!

  • long grain white rice (cook & set aside)
  • 2 Tbsp olive oil
  • 2 stalks celery, chopped
  • 1 small Vidalia onion, chopped
  • 3 large garlic cloves, sliced
  • 1 medium green pepper, chopped
  • 1 small red pepper, sliced
  • 1 bag (10 oz) baby spinach, removing any stems rinsed
  • 1/2 lb asparagus, fresh (pencil thin), (cut off the tough ends)
  • 1/2 bunch scallions, sliced thin
  • 1/2 lb ex-large fresh shrimp, tail on
  • 1 can (28 oz) diced tomatoes
  • 1 cup water
  • 1/2 cup white wine
  • 1 Tbsp lemon zest
  • Louisiana seasoning, black pepper, dried dill, basil, Goya Adobe seasoning, salt, a few red pepper flakes
  • 2 tsp sugar
  • fresh shredded Parmesan cheese topping

    Cook long grain rice for 6 servings.

  • 3 pounds beef short ribs
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 pound carrots (about 6 medium, trimmed, peeled, and halved)
  • 1 pound red potatoes (about 5 to 6 medium, peeled and halved)
  • 4 to 6 small white onions, peeled
  • 1 3/4 cups beef broth
  • 2 tablespoons horseradish
  • 2 tablespoons prepared mustard
  • 2 tablespoons cornstarch
  • 1/4 cup cold water

Preheat oven to 350 F. Trim excess fat from beef short ribs. Place ribs in a 13x9-inch baking dish or roasting pan. Sprinkle with salt and pepper.

Bake the ribs uncovered for 2 hours drain off excess fat. Add the prepared carrots, potatoes, and onions.

In a bowl, combine the broth with horseradish and mustard pour over the meat and vegetables. Cover with foil and bake for 1 to 1 1/2 hours longer, or until tender.

Arrange the short ribs and vegetables on a serving platter and keep warm. Measure pan drippings and add a little water or broth, if necessary, to make 2 cups. Pour into a saucepan (or use the same baking pan) and place over medium heat.

In a cup or small bowl, mix cornstarch with cold water. Stir into the pan drippings and bring to a boil, stirring constantly. Boil for 1 minute.

Serving Suggestions for Grilled Vegetables

Because they are just as delicious served warm or at room temperature, grilled veggies are an entertainer’s dream dish. Serve the grilled vegetables along any side just as they are, or consider adding a simple topping or sauce, like:

  • Sprinkle veggies with shredded parmesan cheese or crumbled feta or goat cheese
  • Drizzle with garlicky chimichurri sauce,creamy avocado salsa verde, or balsamic glaze
  • Add a dollop of homemade basil pesto or arugula pesto

Zesty Burger with Veggies | Recipe

Grilling season has arrived and I am ready! Now, growing up we would grill out year-round, even in the snow, so I’m definitely left craving grilled dishes a lot. We have ventured outside here and there in the cold and rain, but usually we wait until spring when things start to heat up. I have had juicy homemade burgers on my mind for some time now, so I finally decided to make this Zesty Burger with Veggies when we had guests.

Let me just toot my own horn for a minute (I rarely do this): my burgers turned out awesome! I do enjoy eating hamburgers, but they have to be as simple as can be. No lettuce, no tomato, nothing really that would make me feel like I’m eating healthy. For a change, I decided to mix some veggies into the burger to give it some flavor while still allowing me to enjoy eating it. Let’s just say–it worked.

These burgers were simple to make and yielded enough for a decent dinner party or extras to freeze. I served them with homemade sweet tea, fresh melon and grapes, and homemade hashbrowns.

Ok, funny story. I actually tried to make crinkle cut fries using golden potatoes…don’t bother. They don’t hold up like russet potatoes and turned to mush, so the next best thing was to chop them up for hashbrowns. Really though…I meant to do that.


  • 3 lbs lean ground beef
  • 1/4 cup red pepper, minced
  • 1/4 cup green pepper, minced
  • 2 Tablespoons yellow onion, minced
  • 2 cloves garlic, minced
  • 1 teaspoon worcestershire sauce
  • 1 Tablespoon olive oil
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon coarse sea salt
  • 1/2 teaspoon coarse ground black pepper


1. Add in the peppers, onion, and garlic.

2. Dump in the worcestershire sauce, oil, and seasonings.

3. Mix until well-combined. I used my hands (wash them first, of course, as well as immediately after touching raw meat!) You can use a spoon if you’d like, but again I recommend staying away from anything porous with raw meat (i.e. wooden or plastic spoons.)

4. Scoop out some of the meat mixture and form it into a ball then flatten it to make a patty. I did balls about 2 inches in diameter, but you can use any size you would like. Burgers will shrink in diameter but get thicker, so keep this in mind. Place each burger flat onto a glass cutting board or plate. I also stored some of the extra patties in a couple gallon freezer bags. Make sure you get all the air out and store flat in the freezer.

5. Head out to the grill. Cook time will really depend on your personal preference and the size of your patties. I prefer mine well done, so we do direct heat and cook it a little longer, but the size patty we made cooked up pretty quickly. We did double patties rather than thick patties.

6. Don’t forget to toast the buns! Butter the inside of the buns then lay them flat on the grill over indirect heat and cook until toasty. In my opinion, this is the key point to a really good burger.

7. Top with whatever you wish. I just used my usual mustard, ketchup, and pickles, but you can add cheese (swiss or pepper jack would be awesome), onions, lettuce, anything that sounds good.

How to make your Zesty Lentil, Bean & Rice Plates

Get your veggies together in a hot pan. Cook them until tender and then add in your beans, lentils and the sauce ingredients – enchilada sauce, vegan beef broth and fire roasted tomatoes.
