And tons of focaccia bread because, well, carbs on carbs.

Perfect Antipasto Platter

Whenever I’m in doubt about what to serve at a holiday party–or any party–I always opt for this easy but impressive Perfect Antipasto Platter.

It’s really hard to go wrong with a huge assortment of cured meats, sliced and cubed cheese, and vegetables like mushrooms, cherry tomatoes and olives.

Served alongside a big platter of different crackers or Italian bread, guests can help themselves to the things they like best. Even kids will find something to like about this fun and fancy appetizer platter.

Plus, your gluten-free guests can just skip the crackers and still have plenty of options to choose from.

Like I said, it’s hard to go wrong here, and there are really no limits or rules to which meats and cheeses you choose to include. And this antipasto platter looks beautiful and impresses everyone too!

If I’ll be serving adults and kids, I usually don’t get too adventurous with my meat and cheese options–cheeses like cheddar, Colby Jack, or pepper jack are perfect for all ages.

And meats like ham, salami and pepperoni are usually liked by everyone. If I’ll be serving more of an adult crowd, I add in cheeses like Munster or Gruyere, and meats such as prosciutto , sopprassetta and capocollo or soppressata.

Once you’ve chosen all of your meats, cheeses and veggies, you simply arrange them on a large platter, then drizzle everything with Italian dressing and sprinkle with herbs.

This platter can also be made several hours ahead of time, which is always a bonus during the busy holiday season.

Best Antipasto Recipes - Recipes

T his has to be one of the best antipasto recipes ever! The original recipe came from one of those cookbooks where everyone submits a recipe but it has been modified. The only reason for this is when my Dad and Sister were making it they weren't sure if you were supposed to drain the olives and pickled onions, . they didn't and it came out great! The longer you can let it sit, after it's canned, the better it tastes. It is quite a costly recipe to make so what I do is buy the "sale" items throughout the year and make it up a bit before Christmas, that's why I'm posting it now---watch for sales :)

3 cans Olives, ripe, sliced
3 cans Olives, green, sliced
4 heads cauliflower florets, small
3 jars pickled onions
3/4 cup olive oil
6 cans sliced mushrooms
4 green peppers, chopped
5 cans green beans, chopped
8 cups Ketchup, Heinz (The large can at Costco is just the right size)
5 cans Shrimp, or a large bag of frozen, or 4-5 shrimp rings tails removed.
6 cans tuna in water (I buy one big tuna can at Costco)
2 Quarts Dill pickles, chopped

3/4 cup white vinegar, *see Note below

1. Mix first 5 ingredients in large pot. Boil 5 minutes.
2. Add next 4 ingredients, boil 10 minutes.
3. Add balance of ingredients. Try not to break up shrimp and tuna too much. Bring to just boiling.
4. Process in a hot water bath for 15 minutes.

Note: *Drain everything except olives and pickled onion juice. Biffy and Frank's flub (taste great.) Omit vinegar.
Optional - small amount of brown sugar, HP sauce, chopped garlic, hot pepper sauce (dried or fresh) WE NEVER USE THESE.

Easy Antipasto Salad for a Crowd

Holiday season is here and there is nothing better than a party. While my party calendar books up quickly &ndash all of a sudden I&rsquove become popular! &ndash I still attend a few last minute events here and there. And I usually host at least one last minute shindig myself.

I can never attend a party empty handed so if I know that the party was organized at the last minute, I offer up a dish. Sometimes an appetizer like my baked jalapeño poppers or a drink like my blackberry sangria.

This easy antipasto salad is one of the best recipes for parties because it is full of so much flavor. Also, as it&rsquos name suggests, its very easy to make.

I like this for parties because you can store it one of those foil tins that you can use for baking casseroles. Many of them come with lids now and then you don&rsquot have to worry about forgetting your dishes at the party.

Usually for antipasto I use a lot of jarred and pickled products but because I wanted a really fresh tasting salad, I used fresh ingredients. I love a pickled red pepper but a fresh bell pepper is so much better.

Cutting a bell pepper is super easy.

First, slice off the top and bottom of the bell pepper. Then make a slice down the side and pull the pepper open. Use your hands or a small knife to remove anything inside the pepper, like the seeds. Then flatten the pepper on a cutting board. Now you can easily cut the pepper into slices and dice if desired.

Description

These Antipasto Squares are packed with three kinds of meats and cheeses. They make such a good appetizer or even dinner recipe that’s simple, quick and delicious!

Ingredients

  • 2 cans refrigerated crescent rolls
  • 1/3 lb sliced ham
  • 1/3 lb sliced provolone cheese
  • 1/3 lb sliced Swiss cheese
  • 1/3 lb sliced salami
  • 1/3 lb pepperonis
  • 3 eggs
  • 3 tablespoon grated Parmesan cheese
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat oven to 350. Spray 9吉 baking dish with Pam.
  2. Unroll one package of crescent rolls and spread in bottom of dish. Layer salami, provolone cheese, ham, Swiss cheese, and pepperoni on top of the dough.
  3. In a measuring cup (or bowl), beat the eggs lightly, then stir in the parmesan cheese and black pepper. Pour 3/4 of this mixture evenly in dish. You should have a little less than 1/4 cup left.
  4. Unroll the second package of dough, and place on top of the meat and cheese. Brush with the remaining egg mixture.
  5. Cover with aluminum foil and bake for 30 minutes in the preheated oven. Remove foil, and bake another 15 minutes, or until dough is fluffy and golden brown. Cut into squares and serve warm.

  • 3 tablespoons extra-virgin olive oil, divided
  • ⅓ cup chopped marinated artichoke hearts
  • ⅓ cup chopped salami
  • ¼ cup chopped pepperoncini
  • 2 tablespoons red-wine vinegar
  • 1 tablespoon chopped fresh oregano, plus more for garnish
  • 1 pound chicken cutlets
  • ½ teaspoon ground pepper
  • 2 ounces fresh mozzarella cheese, thinly sliced

Mix 2 tablespoons oil, artichoke hearts, salami, pepperoncini, vinegar and oregano in a medium bowl.

Heat the remaining 1 tablespoon oil in a large ovenproof skillet over medium-high heat. Sprinkle chicken with pepper and add to the pan. Cook until starting to brown, about 3 minutes. Turn the chicken over and top each piece with the artichoke mixture and cheese. Transfer the pan to the oven and broil the chicken until the cheese is browned and an instant-read thermometer inserted in the thickest part of the chicken registers 165 degrees F, 3 to 4 minutes more. Serve the chicken with any pan drippings and oregano, if desired.


Ingredients

Step 1

Mix garlic, oil, vinegar, oregano, and red pepper flakes in a large bowl. Add sweet peppers, onion, artichokes, mozzarella, and salami and toss to coat season with salt and black pepper. Let sit, tossing occasionally, at least 15 minutes.

Step 2

Zest half of lemon over salad and add basil toss to combine. Season with more salt and black pepper if needed.

Step 3

Do Ahead: Salad (without lemon zest and basil) can be made 1 day ahead. Cover and chill.

How would you rate Antipasto Salad?

Absolutely hands down the best Antipasto recipe. Made this recipe multiple times- works well with shallot in place of the red onion too!

Omitted the Basil only because I forgot it at the store, used a little less onion, and it was amazing. The dressing reminded me of growing up as I was raised on red wine vinaigrette’s. Will add this to my go too’s. Thanks

I liked this salad waaaaay more than I thought I would. Italian peppers were a trick to find (I have a good grocer but they were pretty picked over) and I wanted something with a bit more flavor than just yellow/orange/red peppers. I admit, it's Hatch chile season and I was tempted to use a mild one, but wasn't brave enough this first time around! So I picked up a good orange pepper, then grabbed a jar each of cherry and banana peppers and diced some of those in---normally am not a fan but they did super well in this recipe---just be sure to give them a quick rinse to get the excess vinegar off after cutting since you already have it in the dressing here.

This is a winner! the flavors are bright and flavorful. The only thing I changed is that I used sliced roasted red peppers from a jar. The cubanelle peppers didn't do much for me. I also added a chopped plum tomato since I had it on hand. The dressing is perfect and lent a great flavor to the dish. It also makes a great sandwich on a ciabatta roll with lettuce leaves on each side to keep it from getting soggy. I can't wait to make it again!
